What I Have Been Up To

I know it is only three quarts. I actually would have had six quarts but discovered in the middle of my preparing that I only had three jar caps! So I had to freeze the other three quarts. I prefer canned tomatoes over frozen. I will use the frozen tomatoes in a nice vegetable stew this winter.
God is blessing us with a lot of fresh veggies. We are getting loads of yellow squash. The tomatoes are slowly but steadily coming along and I usually cut the okra every other day. mm mm mmm!

This is what you call a nice mess of okra. I loooove it just about any way you fix it. Boiled, pickled, fried, or in soup. I have a cousin that will eat it raw. I have not acquired a taste for it raw yet. One of my favorite ways to fix it is from a recipe I found in a Southern Living magazine years ago.
Cut the okra in about 1" chunks. Dip it in buttermilk until it is covered good. Then roll it in flour (salt to taste). Now deep fry it until it is golden brown.
Oh my word, talk about good! mm mm mmm!

When we lived in town I grew the spindliest Impatiens you have ever seen. I just could not get them to fill out and grow. But out here in the country they have been doing really well. I just love them!
