MckLinky Monday ~Holiday Cookies! I'm a day late



Iced Christmas Cookies have been a family tradition for 32 years. Here is the recipe I use:

TRADITIONAL SUGAR COOKIES

3/4 cup shortening (part butter or margarine, softened)
1 cup sugar
2 eggs
1 teaspoon vanilla or 1/2 teaspoon lemon extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt

Mix thoroughly shortening, sugar, eggs and flavoring. Blend in flour, baking powder and salt. Cover; chill at least 1 hour.
Heat oven to 400 degrees. Roll dough 1/8 inch thick on lightly floured surface. Cut into desired shapes. Place on ungreased baking sheet. Bake 6-8 minutes or until very light brown.
Cool on baking racks. Decorate with buttercream frosting. I use different food colors and a variety of sprinkles.

Buttercream Icing

1 cup butter
3-4 cups powdered sugar
dash salt
1 Tablespoon vanilla
About 4 Tablespoons milk (add a little more if the icing is too stiff to spread on cookies)

Softened butter and mix all ingredients until completely smooth. I usually divide this up and add whatever food coloring I want to decorate with.

Watch your family devour these and sit back and wonder why you went to so much trouble making them so cute!
